i started to embrace it last year; now i'm just all for it. we had people over last Sunday to watch "the game" and i made a snack-ey treat for everyone. it was well received and i didn't have any leftover. i will share it with you now:
Taco Sundae
Ingredients: 1 bag Morningstar Farms Grillers (equiv. 1lb. browned ground beef)
1 packet La Preferida taco seasoning (or brand of your choice)
1 8oz can vegetarian refried beans
3/4 cup shredded lettuce
3 husky Roma tomatoes (seeded and diced)
1/2 cup diced onion
1/4 cup lite sour cream
10 sliced black olives
1/2 cup shredded Monterey Jack cheese
Prepare Grillers as directed, adding taco seasoning when heated. Remove and cool. Layer a 1.5 qt dish in this order: beans, lettuce, tomatoes, and onions. When Grillers are cool, spoon on top and refrigerate over night. Before serving, spread sour cream on top and sprinkle with olives and shredded cheese. Present with a serving spoon and serve with tortilla chips.
